										<content:encoded><![CDATA[<p>Neapolitan ice cream &#8211; that delicious blend of strawberry, vanilla and chocolate &#8211; has an international ring to the name and its true origins are still debated. Neapolitan was the moniker given to the combined ice cream flavors in honor of its supposed Italian origins.</p>
<p>The first known recipe for a three-flavored ice cream comes from the head chef of the Royal Prussian household in 1839. The first Neapolitan ice cream from Italy contained pistachio (green), strawberry (red) and vanilla (white) in honor of the Italian flag.</p>
<p>When the dessert moved to the U.S., chocolate was substituted for pistachio as it was one of the “big three” flavors most popular throughout the nation. Neapolitan was the first to combine three flavors in a single package and was introduced to U.S. ice cream fans in the 19<sup>th</sup> century.</p>
<p>In some areas of the world, it’s known as harlequin ice cream, more closely resembles gelato, and may combine ice cream with layers of fruit and other sweets. In 1885, specific “rules” for the cutting of Neapolitan ice cream were laid out. It was to be served thinly sliced so each person received a portion of each flavor. In other locales, it could include cake or brandy-flavored bread served between the layers of ice cream.</p>
<p>In the early 19<sup>th</sup> century, the sale of ice cream as a favored dessert began to decline in Europe. In an effort to bolster sales, European ice cream makers introduced spumoni to the U.S. in the 1870s and it quickly morphed into the strawberry, chocolate and vanilla that’s known today.</p>

The disappearance of the corner malt shop as the premier high school hang out was also the beginning of the end for ice cream sodas, though they can still be found in an altered state that would amaze their creators.</p>
<p>In the era of malt shops, it was a beverage that young men could share with a date. The ice cream soda is a true classic, but as with all great ideas, its creation is surrounded by a certain amount of controversy about its origins. The International Association of Ice Cream Manufacturers attributes Robert McCay Green in 1874 Philadelphia as its creator.</p>
<p>An ice cream soda consists of several scoops of ice cream and a choice of flavored syrup in a tall glass, combined with unflavored carbonated water. In some areas of the U.S. and overseas, soda is used instead of carbonated water and it’s referred to as an ice cream float. The unique beverage was highly recommended by American icon, Will Rogers.</p>
<p>An early variation of the ice cream soda was enjoyed by China’s elite as early as 4,000 years ago, involving frozen juices, syrups, spices and honey that was left in the snow to harden to the preferred consistency. On the American scene, malt shops and soda fountains didn’t like the treat as it took longer to make and people tended to linger over them to savor the flavor instead of quickly eating and leaving.</p>
<p>The truly interesting fact about the ice cream soda is that it never truly died, though it has undergone a variety of incarnations and name variations, only to re-emerge as a luxury treat that would amaze its creator and those frequenting early malt shops.</p>
<p>The ice cream soda of today is made with everything from traditional ice cream to soft serve yogurt and mixed with soda, sparkling water, club soda, seltzer water, and even coconut milk. They’re adorned with whipped cream, colored sprinkles, nuts and candies, sugary cereal bits and cookies, along with exotic fruits. However, for purists of the ice cream soda, a cherry on top is still traditional.</p>
